Everyone has their own favourite pasta: perhaps you prefer long, thin strands of spaghetti or the even slimmer linguine or cylindrical rigatoni or swirling fusilli? There are countless possibilities before you turn to stuffed pasta like ravioli.
Ravioli is a dish that must be eaten fresh. And there’s something liberating about having all the options when it comes to fillings. The only disadvantage is the preparation of ravioli and the fact that a certain skill as a cook is a prerequisite. If only there was a nice, simple way to make these tasty little bags that would take you straight to Sicily or Venice or any other Italian setting where the sun shines and an intoxicating scent of freshly cooked cibo buono fills the air.
The good news is that with the KitchenAid 5KRAV there are ravioli makers.
What you need to make ravioli
Ravioli can be traced back to the 14th century and have been prominently represented in Italian cuisine (and in the cuisines of those influenced by Italian cooking) ever since. Making ravioli by hand was a laborious process that required precision, craftsmanship and a sense of timing. The sheets of pasta dough had to be cut and shaped to the required size to hold the filling and then properly sealed.
We assume here that you have already finished the pasta. KitchenAid also makes pasta makers who will help you with this part of the process, but let’s get to the stage where you have the pasta sheets at hand. You need to choose the type of filling, and there are so many textures, consistencies and densities that this stage may seem daunting. Not with the KitchenAid 5KRAV Ravioli Maker Attachment!
It is essential that you have a KitchenAid blender attachment — the attachment is only for use with this blender.
Something about the blender
There are a number of KitchenAid stand mixer (or food mixer) models. This is an extremely versatile kitchen appliance that can be used to prepare hundreds of different dishes and foods. To make it even more indispensable, the blender can be equipped with a range of accessories (pasta rollers, pasta blade cutter, etc.), one of which is the 5KRAV ravioli machine accessory.
What you get…
The 5KRAV is a stainless steel drum-like attachment with a hopper to hold the filling and a handle that is turned manually during use. Stability is guaranteed once the attachment is correctly inserted, allowing the operator to turn the ravioli machine with his hands. A filling funnel (or small tank/drum) nestles against the top of the attachment and is used to hold the filling during operation.
The 5KRAV is supplied with a small spoon so that the filling can be spooned into the hopper. With a specially designed pointed shape, the spoon distributes the filling in the corners for a fair distribution in the pasta pockets. There is also a small cleaning brush to remove the dried dough after use. The brush is useful because the ravioli preparation attachment (from here on called the attachment) should not be cleaned in the dishwasher. Use warm soapy water and make sure that all food adhering to the attachment is removed.
How to use the attachment?
Okay, let’s get to the important part and find out if this attachment really cuts the mustard. A good design does a lot of the work, as the attachment is shaped so that the pockets are neatly formed and then curled together in an elegant way.
Attach the attachment: The shaft of the attachment is inserted into the base of the stand mixer and then the knob of the attachment is tightened until it is firmly seated. Note that the stand mixer should be switched off before performing this manoeuvre — ravioli is made manually with this attachment.
Add the pasta and the filling: remove the funnel from its position on top of the attachment — it is simply released. Fold the pasta sheet in half and pass it through the forming rollers on the attachment. Put the funnel back in its original position and spoon the filling into the funnel and distribute it evenly with the special Crafter shovel.
Make the ravioli: Now everything is ready for the production of the ravioli bags. Complete this step by slowing down the rotation of the handle so that the pasta sheet passage and the formed drum create a pasta sheet in which the filled pockets are separated by perforations and divided into three rows.

It may take a few attempts to master the process. Not much can go wrong, because we have found that inserting the pasta through the rollers several times without using the filling should make the user familiar with the machine and avoid problems when filling the filling. When the process is finished, sprinkle lightly with flour to give a satisfactory texture to each pocket and to avoid solidification when they are placed in a pot of water.
People have their own individual preferences as to how long the ravioli should be cooked, and the choice of filling is also a determining factor. If you have prepared the pasta yourself, it should be exactly to your taste, but purchased pasta sheets may need some tweaking — add a little water here, a little flour there — to get them exactly the way you want them! Cook as quickly as possible to get maximum freshness and flavour, although the ravioli will “keep”.

We have had no problems with the attachment and appreciate the ease with which it complements other KitchenAid accessories, even if it is a bit expensive. But that’s really a small quibble, as the attachment is robust and has a long life, which means it pays for itself.
Perhaps it is more satisfying to do the whole process by hand and make individual bags of ravioli, but the speed and ease with which the 5KRAV makes this process possible deserves our support. The product also comes with a useful recipe book to start making ravioli.
